'03 360 F1 - Oil Temp Problem

I have an '03 360 F1 and the last two times I drove it hard (revving from 4K to 7K rpm for about 15 minutes as I ran through a local canyon) at the end of my run when I slowed my oil temp suddenly rose rapidly (was previously within a very normal range throughout the run) and then max'd out and the red warning light came on. The oil temp gage rapidly declined after I pulled over and idled for 2 minutes. It's important to note the the oil level is perfect, oil pressure and water temp were both always well within normal operating ranges. Any ideas?
