I am shooting temps with an in

I am shooting temps with an infrared thermometer to see if I really have a running warm issue. I was wondering what I should see temp wise between the inlet rad. and outlet with the fans on.
I shoot them yesterday and the hottest temp I got was 215F and 205 outlet.
I tried shooting temps on my carb 308 and the infrared therm. fluctuated too much to get an acurate reading it was sometimes 210 inlet, 212, then 200 however my gauge was reading 180 and I shot the crossover pipe but from a one foot distance and it was like 160 which I know is inaccurate. Any ideas.

Unfortunately the Ferrari radiators in the later 308's were not very efficient and a temp drop of only 10-20 degrees is about normal with only the fans.

Worried about emisions the idea was to keep the cylinder heads hot and combustion temp up at idle to burn off NOX. So inlet temps in the 215 range I would consider normal.
